Gumbo
Although it would seem to be cold weather dish, gumbo is consumed year round in New Orleans. The variations on this hearty soup with African roots, which has either file (powdered sassafras) or okra as thickener, can include seafood or poultry and sausage or even a multitude of greens. One thing all these types of gumbo have in common is that they are served over rice a major Louisiana crop. While gumbo is often served as the main dish, it's also used as an appetizer. Either way, gumbo is usually the soup du jour for most Louisianians.
Jambalaya
Jambalaya is a Louisiana Creole dish of Spanish and French influence. Originated in the Caribbean Islands, the Spanish culture mixed with the native foods created what is known as Jambalaya. It is traditionally made in three parts, with meat and vegetables, and is completed by adding stock and rice. Served with your choice of chicken or seafood and as a single serving or family plate.
